Crispy Chicken Skin: Bacon of the Poultry World

That’s right: chicken skin is the bacon of the poultry world.

That’s why crispy skin is the first part to go after we roast a chicken in the Manzo household.

Ever have skin-on chicken breast defrosting and realize that the recipe calls for skin-off?

Simply peel off the skin and use it to make this easy recipe to:

  • sprinkle on salads

  • have as an after-school snack

  • eat like a cracker

  • serve as an appetizer at a dinner party

  • give as dog treats

You’ll be glad you did.

Are you worried about saturated fat?

Remember that 1.) we need fat to stay satisfied and avoid snacking in between meals and 2.) many vitamins in fruits, vegetables, and meat are actually fat soluble (meaning the body can most easily absorb the vitamins only if they’re eaten along with fat).

Prep Time: 10 minutes Cook Time: 25 minutes

INGREDIENTS:

  • defrosted chicken skin, (one pound—I sell these!)

  • coconut oil, olive oil, or butter (for greasing to prevent sticking)

  • sea salt (optional)

  • black pepper (optional)

COOKING EQUIPMENT:

  • oven

  • cookie sheet

  • wire rack

  • kitchen shears

DIRECTIONS:

  1. Set oven to 350 degrees.

  2. Place wire rack on cookie sheet and grease top of rack with butter to prevent sticking.

  3. Pull each piece of chicken skin taught and cut into approximately 2 inch pieces.

  4. Lay each piece on the wire rack, without any touching.

  5. Sprinkle lightly with sea salt and black pepper (optional).

  6. Bake for 20 minutes or until crunchy (but not burned) all the way through.

Tip 1: If you follow the recipe above and it’s not yet crunchy, try baking another 10+ minutes. The more skins you are cooking, the more bake time you will need.

Tip 2: These stay crunchy in the frig in an airtight container for up to 5 days.

Tip 3: These are even delicious without salt.

Tip 4: I don’t have an air fryer, but I bet chicken skins would fry up nicely in one.

Tip 5: If trying this recipe for just a few skins from one chicken breast, try baking for 10 minutes before adding more bake time. They aren’t as good burned…don’t ask me how I know.
